Lentil, Garlic & Butternut Stew
This is a scrummy, quick dish from Waitrose discovered by my sister, who is a fab cook. Great with crusty bread. Takes about 30 mins. Serves 4. About 450 cals per portion.
1. Light olive oil
2. 4 celery sticks
3. 1 clove garlic
4. 5 tomatoes
5. 200g lentils
6. 2 x 500g butternut squash
7. 600 mls veg stock
1&2&3 chop and soften
4&5&6&7 stew for 30 mins

Yummy... now if you replace the lentils with butter beans and bortellini beans(spelling?) and some nice smoked sausage, you've got a wholesome meat version (ex-chef recipe!)
